Makes about 8 (4 inch pancakes)
2 eggs
½ cup hemp milk
1 cup flour (mix of Barley and Oat Flour)
¼ teaspoon Baking Powder
2 over ripe bananas
¼ teaspoon pure vanilla extract
coconut oil
2 tablespoon ground flax seed (optional)
- Add cinnamon powder or maple syrup to the batter if you prefer sweeter pancakes.
- Mix all the ingredients in a blender to make a uniform batter.
- Drop a small ladle full of batter in a heated pan with ½ teaspoon coconut oil
- After about 1½ to 2 minutes flip it over cook it for another minute or so to finish it off.
- Repeat the same steps with the rest of the batter to make another pancake
The pancakes tasted pretty good plain, with a springy texture and just a hint of banana. We topped ours with a little maple syrup and berries. The leftover pancakes stored and reheated well for snack next day ! Let me know how yours turn out!
