1 whole large beet
2 small carrots
½ small cucumber (optional)
1 tablespoon Extra Virgin Coconut oil
10 curry leaves
1 teaspoon mustard seeds
Himalayan Salt to taste
Red Chili Powder to taste (optional)
Handful chopped cilantro
Juice of 1 lemon
Coarsely crushed dry roasted peanuts or cashew (optional)
Cube and dice the beets, carrots and cucumber. Add chopped Cilantro and crushed nuts.
In a small pan heat the coconut oil, add mustard seeds, curry leaves, salt, optional red chilli powder. Add this to the prepared vegetables.
Finish with Lemon Juice, serve and eat immediately if using nuts.
