Old-Fashioned Chocolate cake is a favorite with my kids. This is an easy-healthier version of a rich chocolate cake. The oats add a bite to the moist cake. Needless to say this is a KID-APPROVED cake with ingredients that add nutrients rather than just taste.
1 cup rolled oats or ½ and ½ mix of rolled and old-fashioned oats
1 ½ cups Boiling water
¾ cup coconut oil
1 ½ cup coconut sugar or any other dark colored sugar
2 eggs (preferably Pasture raised)
1 teaspoon Vanilla Extract or ¼ Vanilla Bean
1 cup Barley Flour/Whole Wheat Flour
1 teaspoon Baking powder
1 teaspoon baking soda
½ teaspoon sea salt
½ cup (4-5 Tablespoon) Cocoa
Add boiling water to the oats, cover it with a lid and let it stay for 30 minutes.
Mix coconut sugar, coconut Oil, vanilla and eggs, with an electric beater beat well for 2-3 minutes
Add in the cooled oats, and beat for another 2-3 minutes.
Sift the Barley Flour/Whole Wheat Flour with baking soda, baking powder, sea salt and cocoa.
Add the sifted flour to the dry ingredients. Mix well.
Lightly grease a glass baking dish, pour the batter and Bake for 40minutes at 350 degree Fahrenheit.
Keeps well at room temperature for 2-3 days in an airtight container.

Oh my god! This is so good, so delicious n like u rightly said so moist! Kids loved it. I m going to try this again and again it came out so well
