Ingredients for the salad:
1 cup cooked and cooled Quinoa (how to cook perfect quinoa)
1 cup cooked Garbanzo beans
1 cup Cucumber chopped
½ cup Cherry Tomato Chopped
¼ cup blueberries (optional)
Ingredients for the dressing:
Yield 6 oz. dressing (can be stored in a glass container for up 3-4 days)
½ lemon
½ cup fresh squeezed orange juice
4 tablespoons EVOO
Mint large loose handful
Himalayan salt to taste
Black or white pepper ground
To assemble the salad
Mix 1 cup cooked and cooled quinoa (read here … how to make perfect quinoa), 1 cup boiled Garbanzo beans, 1 cup chopped cucumbers, ½ cup chopped cherry tomatoes, ¼ cup blueberries (optional)– add dressing to taste , mix well and let it sit for 5-10 minutes. Serve cold.
