Noodles or Voodles?

Voodles!

Do you like noodles ? What about voodles- vegetables spiraled to resemble noodles! Which one is your favorite? I absolutely love ZOODLES (spiraled Zucchini) – They are very easy to Prep and versatile-does well for Italian to Asian flavors! This is one of my favorite recipes. Apart from Zucchini in the list of ingredients you can use whatever vegetables you have on hand… more the better flavors and more colorful the plate! To add protein to the dish I like to add thin crepe like egg omelets, if you prefer a vegan plate, add generous amounts of Mung Bean Sprouts or slightly sautéed diced non-gmo Tofu.

Word of caution: This recipe seems longer than the work it takes to put together a “five veggies in a dish” meal.

Ingredients:

1 yellow onion sliced

5-6 cloves of garlic minced or crushed

Large handful Thai Basil

2 Zucchini spiraled

3 small Carrots spiraled or grated

2 colored Peppers (red, yellow, orange green or a mix)

3-4 Spring Onions (chopped fine, the white and the greens)

2 cups Mung Bean Sprouts

4 Eggs

Sesame Oil or coconut oil for cooking

Coconut Aminos

Salt, black or white pepper to taste

Hot Sauce or Sriracha {optional}

Heat the oil in a deep pan, add Garlic and cook till fragrant, sauté  sliced onions, cook a couple minutes longer.  To this add in Thai basil, sliced peppers, carrots and cook for a minute or two.

Mix  in the Spiraled Zucchini, Salt , pepper, Aminos and hot sauce. Cook till all noodles cooked yet have a crunch.

To serve:  Top with fine chopped Spring Onions, Mung Bean Sprouts and thin strips of Omelet or Diced Tofu.

To Make Egg Omelet:

4 eggs + ½ cup water

Salt Pepper to taste

Coconut oil for cooking

  1. Lightly beat the eggs and the water. Add Salt Pepper to taste
  2. Grease & heat a well-seasoned Cast Iron pan or whatever you would use to cook fried eggs.
  3. Lift the pan off the heat. Ladle or pour a small amount of omelet mix into the pan. Rotate the pan so the omelet mix covers the bottom of the pan thinly and is even.
  4. Put the pan back on the heat and cook the underside until it is browned.
  5. Flip.
  6. Cook until ready.

Cut the Omelet into strips.

This should make 5-6 10 inch crepe like omelet.
