1 cup Quinoa
2 cups water
1 carrot chopped into cubes
2 yellow onions sliced
Handful green beans chopped an inch long
1 red bell pepper sliced
1 yellow bell pepper sliced
6-8 garlic bulbs
Thyme (fresh)
Toasted Walnuts/Pecans
Extra Virgin Olive Oil
Himalayan Salt
Pepper
Lemon Juice
Wash and soak quinoa for 2-4 hours. Rinse, add 2 cups of water and cook the quinoa. How to cook perfect quinoa.
Sauté the vegetables. In a pan take olive oil, sauté the garlic bulbs and thyme. Add onions and sauté till slightly brown. Add carrots and green beans and cook for a minute, on high heat ,add the bell peppers and sauté till tender. Add cooked quinoa and mix well with a fork. Add chopped nuts, salt pepper. Finish with lemon juice.
Serving suggestions. Serves 4, can be served as a main meal or an accompaniment to meats. Makes a great Lunch Box Meal.
Variation. Can add basil pesto.
