Makes 2 servings
2 large sweet potatoes, thinly sliced
2 tablespoons extra virgin olive oil
1 teaspoon garlic powder
1/2 teaspoon sea salt
Preheat your oven to 450 degrees Fahrenheit.
Cut the sweet potato into large slices about 3/4 inch thick. and then cut the larger slices into fries. The fries should be 1/2 inch to 3/4 inch thick. Lightly coat the fries with with olive oil and garlic salt. Line a baking sheet with parchment paper. Then place the fries on the parchment paper, making sure they do not overlap (unlike the picture). Bake for 18-20 minutes. Halfway through the cooking process, flip the fries onto the opposite side.
When the fries are done, remove from the oven, and immediately sprinkle with sea salt.
And wait for them to slight cool or Not!
Notes: I have made these fries so many times that I can say I have perfected them! I love them as an in-between snack or with my meal. You can either peel the potato or leave the skin on – I prefer to leave it on as it adds nutrition and a nice texture. Another trick to have crispy fries is to dry the sweet potato very well after you have washed and rinsed it.
