Two bean and a kale Chili

Wondering what’s kale got to do with chilli!

In my attempt to create a healthier version of everything my family loves to eat… kale made it to the chilli!

A simple week night recipes, extremely forgiving –don’t have one ingredient skip it or add more of something else, satiating and nutrient rich chilli.

This chilli tastes equally good without the meat- and is a perfect complete protein vegetarian meal.

A note about beans adzuki beans are rich in essential minerals such as magnesium, potassium, zinc, iron, manganese and B vitamins. Adzuki beans contain nearly 17 grams of protein per cup. Adzuki beans also offer an ideal source of soluble fiber, which can aid in the elimination of cholesterol, toxins and other body waste

Serves 4 generous helpings

½ cup Adzuki beans

¼ cup Black beans

1 cup chopped celery

½ cup chopped onion

3 cloves chopped garlic

6 oz. Ground meat (bison /beef) {skip the meat if prefer a vegetarian chilli}

1 cup chopped Red, yellow and orange bell pepper

½ cup chopped carrot

1 whole Jalapeño

2 medium tomatoes

½ cup chopped fresh cilantro

1/2 or more deseeded Jalapeño ( increase or reduce according to taste)

1 ½ cups chopped kale

Sea salt to taste

½ teaspoon cumin powder

1 teaspoon dried oregano

2-3 sprigs fresh thyme –optional

¼ teaspoon cayenne pepper –optional

 

  • Soak & rinse the beans overnight or for at least 8 hours
  • Brown the meat with chopped onion, garlic, dried oregano (no cooking fat required) – if making a vegetarian version skip the meat and add chopped onion, garlic and oregano to step 4
  • Blend the tomatoes and cilantro with 2 ½ cups of water.
  • In a slow cooker- add soaked and rinsed beans, browned meat (optional), all the vegetables except kale, jalapeño (optional),  salt, spices and herbs.
  • Cook for high heat for 6 hours or low heat for 8 hours.
  • Just before serving add chopped kale and let it wilt with heat.
  • Serve with chopped avocado and a dash of hot sauce (optional).

This is great- “cook once eat twice meal”… once for dinner, a day later in the lunch box.
